Italian Sicilian Caponata Recipe
Traditional dishes | Vegan Food | The veggies you won’t stop eating *mouth watering alert*
THE RECIPE:
Sauté 1 finely sliced onion and 2 finely chopped celery sticks in a pan with a bit of oil.
Add chopped tomato sauce, 1 cubed aubergine, 2 tablespoons of capers, 1 table spoon of chopped olives, basil, 1 tablespoon of vinegar and salt.
After it cools down add 2 tablespoons of oil and serve chilled from the fridge.
