Potato and Spinach Roll, a vegetarian feast.
This recipe is easy and cheap.
500 g potatoes
500 g spinach
Boil 500g of potatoes. When they are ready, mash them and leave them to cool for half an hour.
In the meantime cook 500g of spinach with garlic and a bit of oil.
Mix the potatoes with some breadcrumbs and place on a plate. Put in the fridge for half an hour.
Leave the cooked spinach to properly dry for half an hour, squeezing out any excess liquid.
When the potato mix is ready, use 2 baking sheets to help you roll it into a flat round shaped base.
Spread the spinach on top and roll it up.
Cook in the oven for 20 minutes at 180°, with a bit of sage and oil for seasoning.
When cooked, cut the roll into small pieces to serve.
